I agree with Grant. I imagine it would be very tough. They are quite heavy birds so they would need lots of muscle to fly. Muscles are attached to bones by connective tissue, so the more an animal moves its bones and muscles the more connective tissue there will be and the tougher the meat is (think of how chicken legs have such a different texture to chicken breast). Flavour wise I think it would be quite gamey, like pheasant or pigeon.

But wouldn’t it taste a bit like chicken, turkey, duck or goose because they are birds and an eagle is a bird?
