One of my favourite things about cheese is how important the sound the cheese makes is in determining whether you like it. Did you know that the reason that lots of people don’t like hallumi is because it is so squeaky? If you could make a hallumi that did not squeak, a lot of those hallumi haters might start to love it. (I once cooked hallumi in my water bath and it came out extra squeaky!! No one liked it!).
