Different fruits contains different types, and different quantities, of acids and sugars. It is the presence of these acids and sugars that activate the taste buds on the tongue. So theoretically, pies made with fruit that contain high levels of acids and sugars, and lots of different types of sugars and acids, should activate more taste buds. The question would therefore be – which fruit contains the most acid and sugar? This in itself could probably take a year to work out! it would be a great little research project though.
