      When students bring me a particularly nice graph of results, I put it on my wall so I can admire it. At the moment I have a nice picture on the wall with four graphs that give insights into the way that wheat breaks during milling, and how the breakage patterns are affected by wheat hardness – it’s a nice result, because it gives understanding that is both new and powerful. I also have a nice picture showing where all the wheat in the UK comes from (some of it we grow ourselves, and we grow different types for different purposes, and some of it we import), and where it all goes (some into bread, a lot into animal feed, these days some of it is turned into ethanol that we use as a substitute for petrol in our cars, while some goes to export).

      When we made drinks that changed flavour as you drank them. That was pretty cool! Like the ripening banana drink that I developed for my PhD – it started as unripe banana, and ripened in flavour as you drank the drink.
