Some of things I have made recently are anchovy icecream (interesting!) with liquid nitrogen, edible “snow” with the pakojet, coriander flavoured water with the sonic homogeniser, raw tomato ketchup (so a ketchup made with tomatoes you have never cooked), raspberry flavoured butter, crystal clear coffee, infused oils – lots of things!
