      Potato salad recipes always tell you to add potatoes to the vinaigrette when the potatoes are still hot. I was testing whether this was the case! In fact, it turns out that when they are still hot, they do take up more oil, and this affects the texture and flavour of the potato.
      I am away at a conference at the moment, but I will upload some photos when I am back. Thanks for reminding me!
