Question: is your job just based on cheese?

Yes and for the moment Cheddar cheese. Cheese is so complex you need to specialize. A cheddar compared to a brie is so different that you need to make specific research on each to find for example how to make it taste better and because it take so much time to research you need to specialize but perhaps next time I will be working on brie and the knowledge I got from cheddar will be useful!
