• Question: Is therer any way you guys can make a healthy and none fattening cheese?

      Yes more and more cheese with less fat and less salt are being developed. However, I believe cheese is not unhealthy as long as you eat the right portion size (cheese has less calorie than chocolate). Cheese where fat has been replace is different from normal cheese, the texture is not as good plus artificial additive are used. In term of salt I have work on a few project trying to reduce salt and the problem salt is use to limit the development of bacteria and if you reduce the protection plus salt is an important part of the flavour and again you cannot have the same taste than natural cheese.
