• Question: How do you select what type of cows' milk is used for cheese?

      I look at past research and talk to cheese maker who told me the best yield are with Jersey cow but the quality is better with Holstein-Friesian! So then decided it would good to try to mix both and see if can have the best of both!
      Most cheese maker choose the type of milk that they think is best (not always logical 🙂 )which can be any breed.
