      Hi,
      Each cheese has a different recipe but mostly cheese making is done by: taking milk which you pasteurize (too make sure bad bacteria are killed), adding bacteria so the acidity of the milk is increase and the cheese will age properly, add an enzyme which will make the milk coagulate, the milk gel is then cut and sometime heated so a maximum of water is expelled before putting it into molds and press to take even more water out and give it a nice shape. The you put it in a cool place (8C) and wait until it is ready which depends on the type of cheese. For cheddar it can take up to 2 years!
