      The blue ‘veins’ that you see in blue cheeses are a fungus (such as Penecillium) growing in the cheese. This fungus is added during the making of the cheese and helps to produce the flavour and smell of the cheese.

      Duncan is right! The only thing to add is that this fungus need oxygen to grow so we make tunnel in the cheese to push the to grow inside of the cheese!
