• Question: Hello Rachel In your Typical Day section you explain how you try and change the texture of the foods. How is this done? I think it is to do with the particles in the solid food.

      Hello! It’s more about taking a food and changing its texture, for example you take a liquid like vinegar and turn it into a solid by adding a gelling agent. Or there are ingredients that you can add to fats and oils which turn them into powders – so if you take something like olive oil you can end up with something that has the flavour of olive oil but a totally different texture – it is a powder! Changing the texture of something from what it normally is shocks and surprises the person eating it, and you get an interesting reaction from people!
