We came across some quite exciting things when I was trying to recreate Willi Wonka’s gobstopper, all related to how you perceive flavours. Trying to stabilise a 6-tonne chocolate waterfall a few years ago was exciting. I have also made some interesting findings recently (although it will probably sounds very boring -when written down!) on the thickness properties of different solutions in relation to how you perceive them in the mouth, and on cooking meat safely in the water bath.
