Dairy products are designed to be easily consumed – milk is made for babies, after all – so they tend to be perishable and have short shelf-lives. If milk is pasteurised, it can be kept in the fridge where it will last about 10 days – if it is sterilised, it doesn’t then need to be chilled, and will last about 6 months or perhaps a bit longer. Making cheese and yoghurt allows milk to be kept a bit longer – several weeks or months, sometimes longer.
