Im terrible at baking but if you did a degree in our school, you would learn how to bake bread using industrial equipment and try lots of different recipes
The best bread is fresh bread – it almost doesn’t matter how good the recipe is. And using a breadmaker makes it easy. Mine uses 550 g flour, 7 g yeast, 8 g salt, 9 g sugar, 25 g butter, 360 g water, for a white loaf (for a healthier loaf, use half wholemeal flour and increase the water to 370 g or so). When it’s fresh it’s great, but it doesn’t keep for long (fortunately we usually finish it straight away).
I am actually running a whole 4 hour class next Monday on bread making. We change the different ingredients, and the quantities of them, and see what happens to the bread texture and flavour. I’ll keep you posted!
I have made bread using both a bread maker and by hand – this is very relaxing as you knead the dough. But I can’t remember any of the recipes! At the moment I buy all my bread, but I should get back to making my own.
